The Bikini Cocktail

Ingredients for the Clementine Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Premix (makes 850ml, serving 10)

400ml premium vodka

150ml peach liqueur
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish

Instructions

For the Citrus Syrup: Put all the ingredients in a saucepan, bring to a light boil, agitating so the sugar melts. Then, remove from the heat allowing it to reach room temperature fully. Pour into a sealable bottle, seal keeping it chilled, where it will keep for about one month.

Preparing the Premix: Pour all the liquid ingredients into one big jug, leave to sit for one hour, then strain , ideally through muslin, so it's fully clarified.

To serve: Measure 85ml from the premix into a stirring glass filled with ice, and stir lightly for one minute to chill. Pour to a cold coupe glass or similar, decorate with some cranberries and finish by giving it a brief mist of mandarin oil above the glass.
